Now I Wish to talk about Kombucha. Which is obviously completely unrelated to those Banana Oatmeal Cookies, but I understand you won't mind.

They have the ideal amount of banana flavor and a lovely chewy feel thanks to the oats. The chocolate chips are just an extra bonus.

I like these biscuits a little on the left handed side, so that I inhale them for 9 or 10 minutes. If you prefer these to be cooked through, I'd shoot for 10-11 seconds.

BANANA OATMEAL COOKIES



PRINT RECIPE

INGREDIENTS:

1/2 cup unsalted butterat room temperature

1 cup packed light brown sugar

1 large egg



1 1/2 tsp pure vanilla extract

1 cup pops flour

1 teaspoon baking soda

1 teaspoon salt

2 tsp ground cinnamon



1 cup semi-sweet chocolate chips

DIRECTIONS:





Scrape down the sides of the bowl and then mix in the egg until completely incorporated. Scrape down the sides of the bowl again and add in the skillet and vanilla.

In a medium bowl, whisk together the flour, baking soda, salt and cinnamon.

Gradually add the bread mixture to the banana mixture and mix until just blended.

Scrape the sides of the bowl and then stir to recombine.

Stir in the oats and chocolate chips and mix until incorporated.

Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough on prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and then lightly press the tops of each cookie using the bottom of a drinking glass. Since these cookies do not spread considerably, this can give them a traditional cookie shape.
